30 Minute Sweet & Sour Chicken

Things you’ll Need
– Main –
1 LB of Chicken
A pinch of Salt
Oil for deep frying
– Breading –
1 Cup of Flour
2 tsp of Baking Powder
1 tsp Baking Soda
1/2 Cup of Corn starch
1 Cup of Cold water
– Sauce –
1/2 Cup of Water
6 Tbsp of Ketchup
3 Tbsp Rice vinegar
2 Tbsp Cornstarch
1 Cup of Sugar

Cut all your chicken into smaller bite size pieces, lay it out on the cutting board, season the chicken with salt (other seasonings optional) let marinate while you work on the breading.
Make the breading; Grab a bowl and add in flour, baking powder, baking soda and corn start. Mix it well so they blend evenly. Add in your water until its a pancake batter consistency. May need more water.
Throw in about half the chicken into your batter and let it sit while your oil is heating up. Heat oil in a pan on stove about medium to high heat.
Once oil is hot throw in your chicken pieces one at a time until pan is covered, let fry for 3-4 minutes then flip and fry for another 3 minutes or until golden brown. Repeat until all chicken is cooked. Let sit on paper towels to soak up any unwanted oil.
The Sauce, put a small pan on the stove to medium to high heat, add in all the ingredients, (for the water and corn starch I like to make a slurry prior so its not chunky in the sauce). After adding in all ingredients stir until well mixed, then occasionally stir until sauce is at a roaring boil. Take off heat and let stand for a couple minutes.
I like to make a side of white rice with this throw it all in a bowl and add a veggie.
